Well, travel didn't make it into my first posting...there are so many tomatoes I had to talk about them instead! So happy to see them turning from that first blush of orange to ripe red. Cukes are pretty prolific right now, and gazpacho's on the menu. My friend Emilie's recipe is the easiest and best:
3 ripe tomatoes quartered
1 medium cuke unpeeled and chunked
1/2 green pepper in big chunks
1 clove garlic
1/2 medium onion
1/4 to 1/2 cup water
1 Tblsp oil
3 Tblsp red wine vinegar
a little salt and a good grind of pepper.
Blend to your desired consistency. Keep it really cold, and serve it on a hot night. Nothing beats it.
